Ingredients

3 pork shanks with skin
1.5 l dark beer
rosemary
sage
oregano
thyme
lemongrass
garlic
extra virgin olive oil
butter
salt
pepper

Instructions

1.Take the shank and brown it in a pan with the garlic, remove the garlic, salt and pepper, add all the herbs and the beer, cook for about an hour, adjust the salt. When the shank is 3/4 cooked, drain it and place it in a baking tray on a bed of fresh rosemary, add a good knob of butter and some cooking liquid, bake at 250° for about half an hour until fully cooked.
