Pork Shank with Beer and Herbs

| 3 pork shanks with skin | |
| 1.5 l dark beer | |
| rosemary | |
| sage | |
| oregano | |
| thyme | |
| lemongrass | |
| garlic | |
| extra virgin olive oil | |
| butter | |
| salt | |
| pepper |
| 1. | Take the shank and brown it in a pan with the garlic, remove the garlic, salt and pepper, add all the herbs and the beer, cook for about an hour, adjust the salt. When the shank is 3/4 cooked, drain it and place it in a baking tray on a bed of fresh rosemary, add a good knob of butter and some cooking liquid, bake at 250° for about half an hour until fully cooked. |
